It’s so funny but when I watch the videos that you post of you cooking with mushrooms, I am like I want to try that so bad, I absolutely HATE mushrooms but you make it look so good and the way you respond to your food makes one believe that it is delish!!! So I will definitely try this recipe this weekend and let you know what I think.

I have a confession I tried one of your recipes with the exception of the cayenne pepper. I had mushrooms onions garlic walnuts. I’ve NEVER thought that it would be as good as it was! Very impressed and will be trying this as well. Thanks! BTW it’s so good to be hearing from you. Stay safe🙏🏾
Hi there Nomadic Introvert 👋🏾. Enjoyed this article. Yes, "Vanlife" really teaches us a lot... especially when it comes to how we prepare our daily meals. For me, I've always been attracted to people who are good at cooking. I'm not a fan of cooking... never have been. But I have to eat, so when I lived in my "sticks and bricks" I would cook meals to last (leftovers) for a couple of days at least. And I always had a streamlined menu. Breakfast, lunch and dinner, were basically the same food items, with a little variety of desserts, alongside. So, definitely I would go to Chefs' cookbooks and recipes, whenever I got the hunch to try something out of the ordinary. And I actually did well, most of the time. Then came the Big Transition... so I became more streamlined, to the point of being a pescatarian. Menus... like before, the same now, in smaller quantities that fit into a small cooler/fridge. How we cook in a Van is a great part of our learning curve. So, I really appreciate your sharing your delicious home cooking with us. You make it look so easy. I appreciate you and the content that you present. I love one pot meals and your look so appetizing. That's great that you begin to look at food differently, as I grow older I began to think about food differently as well. I also discovered while fasting, that the body does not require the buffet amount of food the we can consume at one sitting, and that I was an emotional eater, looking for something to eat in the mist of frustration, So, I ask myself what kind of a relationship am I going to have with food, my thoughts were since food will be a part of my life for the rest of my life, will I let it consume me or will I consume it according to my standards ( by monitoring what I eat and how much I eat). I pay attention to how my body feels after I eat a meal, what I eat for dinner, I'll be able to feel it in the morning, will I be sluggish, puffy or energized and ready to go. I have alot of thoughts/questions about my relationship with food, a relationship can be either toxic or healthy. I'm choosing healthy and I'm learning daily what my body type likes and dislike.
