Food And Van Life
Living in a van or should I say, “van life,” has taught me many valuable lessons and opened my mind to love food again. I fell in love with the idea of perhaps one day becoming a chef even though I can’t cook lol. When I lived in a house I used cook, but I never put any thought into anything I cooked or the spices I used. Come to think of it, I don’t think I used spices. I used pre canned sauces. Yep, that high in sodium sauces with ingredients not even the smartest kid at a spelling bee can pronounce or spell.
Taking care of my body by cooking with healthy fresh ingredients wasn’t a priority for me because I was too busy living the American Dream that is I was too immersed in the American grind of all work, no play or no sleep for that matter. I was trying to get that bag, but in the process, I lost my way and developed an unhealthy relationship with food. I don’t know what it is about van life, but living in a van makes me want to do things I never thought of doing.
Van life makes me feel like I can do anything and overcome everything. Since the beginning of van life, I changed the way I looked at food. Now, I’m not completely healed, but I’m better off today than when I lived in house. I’ve developed a love for cooking and playing in spices. I’m not your typical salt and pepper girl. I love my seasonings wild, spicy and packed with flavor and because of this I came up with my first thought out recipe. As simple as this combination of food and spices is, I love it. FYI: I just want to say that I have a food intolerance and because of that I’m not able to eat a lot of raw fruits and vegetables, keep that in mind when you see a lot of my recipes that’ll I’ll be posting in the future.
Allow me to share a recipe with you that I think you would like, well I like it. It’s my go to comfort dish. Disclaimer: I don’t measure my spices or my food (the only thing I do measure are walnuts). So, everything is measured to taste and measured to how much you think you can eat.
Recipe
Seasonings:
Cayenne pepper (optional)
Old bay seasoning
Slap Ya Mama Cajun seasoning or whatever Cajun seasoning you have
Garlic powder
Chili powder
Soy sauce (optional)
Unsweetened Coconut milk or heavy whipping cream
Oils
Avocado oil or Olive oil
Butter
Food
Imitation crab meat
Broccoli shallots
Cherry tomatoes
1 or 2 Servings of cooked rice (white or brown)
Instructions
Add oil and butter to a medium heat pan
Once the oil and butter are hot, add the imitation crab meat. Sautee the crab meat for approximately 15 mins or until the crab is soft and starting to fall apart.
After the crab meat is soft, add the broccoli (add as much broccoli as you like) and Sautee the broccoli until it is to your liking.
While the broccoli is cooking, take your cherry tomatoes (add as much cherry tomatoes as you like) and cut each tomato in half. After you cut the cherry tomatoes in half and the broccoli is cooked to your liking, add the cherry tomatoes to the broccoli and imitation crab meat and Sautee until the cherry tomatoes become a tomato sauce.
Now, take all seasonings that is listed above and season the food to your liking. Once you have seasoned everything, add your coconut milk or heavy whipping cream to taste. Then, turn down the heat and simmer the food for an additional 10 minutes.
After 10 minutes, add your cooked rice. Allow your cooked rice to absorbed the liquids and flavors for about 5 mins or so then enjoy!
